Location: Remote

Type: Internship 

Compensation: Unpaid (due to budget constraints), about 3-5 hours per week. Can be used for college credit if applicable.

Dates: January 20, 2027 – May 1, 2027 (Excluding school breaks) – RKRF Classes run February 10 – April 14, 2027

Our Organization:

Current estimates, as provided by the Centers for Disease Control and Prevention (CDC, 2020), indicate that around 20% of adolescents in the United States are living with obesity, a condition that is often classified as malnutrition. Such conditions as sleep apnea, cardiovascular disease, diabetes, and asthma are more prevalent among minors (CDC, 2017). To reduce malnutrition, obesity, and chronic disease, Eat to Thrive & Real Kids Real Food advocates for a healthful lifestyle.

Real Kids Real (RKRF), a non-profit 501(c)(3) organization founded in 2005, manifests its mission of preventing obesity, chronic disease, and malnutrition through education and advocacy of healthy living through two separate ten-week programs: RKRF for children 3 – 10 and Eat to Thrive (ETT) for adults offered three times annually. They learn how to make affordable, healthy lifestyle choices through hands-on, fun activities: nutritional education, kitchen gardening, preparing plant-based meals, fitness, and mindfulness. RKRF provides free recipe ingredients for all food-insecure children. 

This position:

We are seeking a Virtual Instructor Intern that will directly play a key role in ifaciltiaing and co-leading the virtual, interactive 1-hour weekly Virtual RKRF classes via Zoom. Interns teach children how to prepare simple, kid-tested raw plant-based recipes, guide mindfulness and physical movement activities, and lead fun, educational lessons on nutrition and nature. Interns are directly the heart and face of Real Kids Real Food classes. This role is ideal for students or volunteers passionate about nutrition, public health, early childhood education, plant-based culinary arts, and non-profit administration.

Responsibilities:

• Load or co-lead or lead weekly live, 60-minute virtual RKRF classes for children ages 5–12 via Zoom.  
• Guide students step-by-step through kid-tested, plant-based living food recipes (e.g., banana ice cream, guacamole, raw brownies, smoothies, and “ants on a log”).  
• Teach weekly curriculum topics, such as Eating a Rainbow, What is Real Food?, Sugar Shock, Why Water is Important, and Plant Protein.
• Review and prepare lesson plans, recipe ingredient lists, and supply needs prior to each weekly session.  
• Ensure a safe, encouraging, and highly interactive online learning environment that accommodates different learning styles through visual arts, music, and games.  
• Foster active participation, confidence, and positive discussion among young students and assisting parents/caregivers.  
• Attend weekly instructor prep/discussion meetings with the program coordinator and fellow teaching assistants/interns.  
• Assist in gathering weekly student feedback, quotes, photos, or video testimonials for reporting and promotional materials.  

Qualifications/Requirements:

• Currently enrolled in an accredited college/university within the U.S. 
• Strong alignment with our mission of plant-based nutrition, wellness, and youth/family empowerment.
• Strong enthusiasm for whole-food, plant-based nutrition, organic living, mindfulness, and children’s health education.
• Comfortable and engaging on camera; proficient in using Zoom features (screen sharing, managing chat/audio)
• Friendly, patient, professional, encouraging, and easy to understand.
• Access to a stable internet connection, webcam, and microphone.
